“Let’s Go Bananas” Cinnamon & Walnut Banana Bread
What do you do when you have a few bananas laying around a bit too ripe but to guilty to throw it away? one perfect option is making banana bread! After it is made you can freeze it for a month! Winning :) Here is my recipe for it and that addition of Sri Lankan cinnamon really makes a big difference.
Cinnamon & Walnut Banana Bread
Recipe

Ingredients
100g softened butter
140g caster sugar
1 beaten egg
225g plain flour
2 tsp baking powder
4 very ripe bananas (1 whole for decoration)
85g chopped walnuts
50ml milk
1Tsp Ceylon Cinnamon
Method
Heat oven to 180C/160C fan/gas 4. Line the base of a 2lb loaf tin with baking parchment, then grease it with butter.
In a large bowl, mix together the butter, sugar and egg, then slowly mix in flour and baking powder. Peel, then mash the bananas. Now mix everything together, including the nuts.
Pour your mixture into the tin, then place a split banana on top (as the picture) and sprinkle with sugar finally bake for 1 hr, or until a skewer comes out clean. Allow the cake to cool on a wire rack before removing from the loaf tin.
